Unlike typical pakodas, Gota are made from coarsely ground besan (gram flour), fenugreek leaves (methi), crushed black peppercorns, coriander seeds, and a hint of sugar. Deep-fried to a golden exterior with a soft, airy center, they are served hot alongside fresh curd (dahi) and fried green chillies.
